How much water in chafing dish?
Fill your water pan with about one inch of water. The water creates the steam that will keep your food hot.
Set the chafing dish on a flat stable surface and pour hot water into the base until it is approximately 2 inches deep. 2. Test the water level by lowering in the empty food pan insert and lifting it back out. Remove some of the water until the bottom of the food pan insert comes out dry.

The sternos typically keep the food warm for 4 hours. This means between the hotbox we bring the food in and the chafing dishes we can keep the food hot up to 8 hours after it has been cooked!
Serve or keep food hot in chafing dishes, slow cookers, and warming trays. Be aware that some warmers only hold food at 110 °F to 120 °F, so check the product label to make sure your warmer has the capability to hold foods at 140 °F or warmer. This is the temperature that's required to keep bacteria at bay!
